While the name of this cake was passed down in our family, other versions of this recipe call this dessert a “Pig Pickin’ Cake.” The origin of the name of this cake – in either case – is unknown. Our best guess is that perfect summer treat is “pig-out” worthy.
1 box of yellow cake mix (french vanilla, vanilla, etc)
1 cube butter
1 can of mandarin oranges
Mix cake mix, butter, eggs, and the juice from the mandarin oranges together. Cut up mandarin oranges and fold into the batter. Pour batter into three round cake pans. Bake at 300 degrees for 35 minutes.
8 oz cool whip
1 can crushed pineapple
1 box vanilla instant pudding
Mix ingredients together and layer in between cake levels and on top of the cake.
