PUFFED APPLE PANCAKES

This is a family favorite.

Ingredients

  • 6 Eggs
  • 1 1/4 Cups Milk
  • 1 Cup Flour
  • 3 Tbsp Granulated sugar
  • 1 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 1/4 Tsp. Cinnamon
  • 1/2 Cup Butter
  • 3 Apples (Peeled and sliced)
  • 3 Tbsp Brown sugar ( I’m more generous)
  • Cinnamon to sprinkle over apples before baking

Directions

  1. Preheat oven to 425 degrees.
  2. In a blender, mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended.
  3. Melt butter in a 9×13 baking dish. Arrange apple slices in baking dish. Sprinkle generously with cinnamon. Return to oven until butter sizzles. Do not let butter brown.
  4. Remove dish from oven and immediately pour batter over apples. Sprinkle with brown sugar. Bake for about 20 minutes or until puffed and brown. Serve immediately.
